Easy As Citrus Slice

There’s something about citrus that instantly lifts your mood — the smell of lemons and oranges, the way the zest cuts through the sweetness, the freshness it brings to every bite. This slice is one of those easy, no-bake recipes that feels like summer all year round.

Made with crushed biscuits, coconut, and a creamy condensed milk base, it’s topped with a tangy lemon icing that sets beautifully in the fridge. It’s simple to make, looks beautiful on a plate, and always disappears quickly when shared with friends and family.

Whether it’s a weekend treat, a school lunchbox favourite, or something sweet for a sunny afternoon, this citrus slice is light, refreshing, and just the right balance of sweet and tart.

Ingredients

Base:

250 g plain biscuits

80 g desiccated coconut

395 g sweetened condensed milk

125 g butter

1 Tbsp finely grated lemon zest

1 Tbsp finely grated orange zest

Icing:

225 g icing sugar

1½ Tbsp lemon juice

1 Tbsp melted butter

½ tsp finely grated lemon zest

1–2 tsp hot water (to reach spreading consistency)

Method

Base

Grease and line a 20 × 30 cm slice tin with baking paper.

Place the biscuits in a food processor and blend to fine crumbs (or crush in a bag with a rolling pin).

In a large bowl, combine biscuit crumbs, coconut, and citrus zest.

In a small saucepan, melt butter and condensed milk together until smooth. Pour over the dry ingredients and mix well.

Spoon mixture into the prepared tin, press down firmly and evenly.

Icing

Mix icing sugar, lemon juice, melted butter, and zest. Add a little hot water as needed until smooth and spreadable.

Spread icing over the base, then refrigerate for at least 2 hours (or until firm).

Cut into squares and enjoy cold.
